Botanical name - Artemisia Dracunculoides.

Tarragon is called the 'king of herbs ' by the French.

Position - Full sun.

Spacing - 45cm.

Uses -

Tarragon is used for flavouring - especially in vinegar.  Also used in soups, mayonaise and chicken dishes.  Best used fresh and best added at the end of cooking as heat tends to decrease the flavour.  Tarragon was used by the ancient Greeks to releive toothache as it has mild anesthetic qualities.

Care -

Tarragon has average water needs.  Tarragon is unique in that during growth it seems to have little aroma, yet after harvesting the oils concentrate and emit their sweet aroma.
